buy brands made with durum wheat (also called semolina). This is the pasta of
preference because it absorbs less water, has a mellow flavor and retains a
pleasant "bite" when cooked. When buying dried pasta, always check
the package to make sure the pieces are unbroken. If it looks crumbly or dusty,
air has gotten to it—it's stale.
